no problem. brown sugar is fine. i won't lose sleep over the slight loss of liquid. if that bothers you, add back the equal amount of water.

i could identify the different types of bananas but know nuts about its nutrition value. as long as it's a banana, it's good to eat!

Hi BG - I've heard about this Sg Pelek place. It's near where my parents live (Banting). I must visit this place when I am back in S'gor. Usually fruits are dirt cheap in Banting especially the Sunday market unlike here in Penang. Bananas, dragonfruit, etc are cheap and delicious. Want to ask you, are you an expert on different types of bananas? I heard some are better than others in terms of nutrition. I wonder why!

Oh ya, did you know flaxseeds need to be ground first? Otherwise, they'll just pass through your body and nothing nutritious happens. Apparently the seed covering is tough and won't be digested if you don't grind it first. Got this info from my friend who runs an organic food shop.

Thanks for the plug and the visit (and finding Mark).
I do use the brick oven for commercial production of sourdough breads when I can. My main concern is that the oven is really hot and sometimes I cannot avoid some good well baked crusts. Generally, Malaysians do not like 'dark' crusts. I use it to bake my own bread nice and dark and tasteeeeeee.

Good luck with the sourdough baking, send me and email if any problems.

i'm sorry, i don't know the address though i've been there the past 2 days! friends paid visit and everyone wanted to go there. my wife couldn't stand pizza anymore and went for chinese porridge from the neighbouring stall. but i could eat pizza every day...

the radiant brand, i believe it's stone-milled, hence finer and better.

i compared local "no brand" wholemeal to those imported like the country farm and radiant brand before. hands down, the imported brands are nicer. i may be wrong but the local types look like regular white flour plus some husks and bran...

i may be wrong on this but the fact that it absorbs more water (behaving like white flour) only strengthens my suspicion!

after much experimenting, nowadays i stick to the same brand. no adjustments needed!

Hi BG: Wow. That is a good way to make sundried tomatoes. Free of flies and dust too. I must try it one day. Just wanted to ask you, is there any difference in wholemeal flour from different brands? I bought one packet of it from the wet market and it was full of husks but it seemed to absorb more liquid than the regular Country Farm brand. Then I found Radiant Food brand wholemeal bread flour. Very fine, finer than the one from Country Farm. Need your expert opinion on this.

congrats! i baked 2 loaves over the weekend but ran out of rye so went for 100% wholemeal. i think it rose higher than the addition of rye but with rye, there's more depth to the taste.
